Together | Chicken Tikka Tacos

Think about the last time that you made a meal for someone. It could’ve been for your family at dinner, or catching up with an old friend and finding out about their recent journey. Maybe it was for someone in your community that was sick and you made them soup or a comfort dish. Do you remember how it felt to show that person (or persons) that gesture of giving?

Maybe it was a celebration like a wedding. Maybe it was a sad occasion. One thing that is consistent at all of life’s big occasions is food. Regardless of the reason, you were able to show that you care for them through cooking. It is one of the strongest expressions of love we can give to one another.

Food is the ultimate gatherer. It unifies people regardless of their age, background, or social status. Everyone has a memory involving food. Like Grandma’s famous chicken dish, or last year’s famous BBQ. It’s the one thing we all have in common.

And food is timeless. Recipes are often passed down through families and help us connect to our past. My girls were raised in Southern California, but we when cook food from India together they are learning about their culture and their extended family. Food transcends both time and distance.

These reasons are why I love cooking so much and why I enjoyed sharing recipe ideas at Williams Sonoma. Food is about more than just calories and energy. It can be a gift. It can be a story. And it can be the glue that keeps us together.

Life Recipe:
Together

  1. Every once in a while I think about a friend or family member that needs encouragement.
  2. I find an available day and time that might work for myself and that other person.
  3. I give them a call and let them know that we're due for some time together.
  4. If they accept, I think of something I can make especially for them. The personal touch will make them feel encouraged.
  5. And if I'm really feeling creative, I'll find ways to add special personal details to the presentation. I might include their favorite desert or give our meet-up a special theme.
  6. I make sure to spend that time focused on my friend and free of outside distractions. Today, one of the most precious things you can give someone is your attention.

Lunch Recipe:
Chicken Tikka Tacos

  • 1 whole chicken cut in 8-10 pieces no skin no fat
  • 1 cup of yogurt
  • 1 tbsp of lemon juice
  • 2 tbsp of Life is a Recipe® Tikka Masala Part 1
  • 2 tsp of salt
  • 1 tbsp minced fresh ginger
  • 1 tbsp ghee
  • 1 clove of garlic (chopped)
  • 1 -3 serrano (finely chopped)
  • 2 tomatoes (chopped)
  • 1/2 cup of heavy whipping cream or coconut milk
  • 1 tsp of salt
  • 2 tsp of Life is a Recipe® Tikka Masala Part 2
  • 2 ¼ cup chopped fresh cilantro
  • 10 corn tortillas
  • 1 cup shredded mozzarella cheese
  • *add more salt to taste.

Instructions

  1. In a large bowl, combine yogurt, lemon juice, 2 teaspoons of salt, and 2 tablespoons of Tikka Masala Part 1.

  2. Stir in with chicken, cover with plastic wrap and refrigerate for 1 hour.

  3. Preheat the oven to 350 degrees. Lightly oil the pan.

  4. Bake until the juices run clear.

  5. Melt ghee in a large skillet on medium heat.

  6. Sauté garlic, ginger, and serrano chili for 1 minute then add chopped tomatoes.

  7. Cover with lid and allow tomatoes to cook.

  8. Add 2 teaspoon of Tikka Masala Part 2 and 1 teaspoon of salt.

  9. Add the chicken to the mixture and stir.

  10. Next, add 1/2 cup of cream or coconut milk, but find the cream makes this dish yummier.

  11. Add more salt to taste.

  12. Reduce to simmer for 10 minutes for juice to vaporize and garnish with cilantro.

  13. Put another pan on medium heat.

  14. Add 1 tablespoon of oil and place a tortilla in the pan.

  15. After 20 seconds, flip tortilla and place shredded mozarella cheese on top.

  16. Wait until the cheese is slightly melted and place the shredded chicken tikka masala on top of the cheese.

  17. After 30 seconds, fold tortilla in half. And serve.
